Hello, Are there any instructions on how I could edit the name of a survey (activity) after it has been published? It seems I can edit everything else but the survey name.

You can edit that by opening the Survey Editor, going to the Contents tab, clicking on the Settings, and changing the Survey Name section. The image below shows how:
